Almond Joy Cupcakes!

So, I have not baked in a while, and I got the urge this past weekend. Plus, I needed my boss to do something so I had to bribe her with cupcakes! lol. Im soooo serious! lol

Anyway. Here ya go.
What you need:
Any chocolate boxed cake mix (and the oil/water/eggs)
almond extract
shredded coconut

to make the cake mix all you need to do is mix according to the directions on the box. Plus, add about 1/2 cup coconut and a teaspoon or less of almond extract. Scoop into wrappers and bake to directions.

The filling:
4c powdered sugar
8oz whipped cream cheese
2 tbs heavy cream
1c shredded coconut
1tsp coconut extract
1/2c butter

Mix all the above ingredients and put into a piping bag w/filling tip. You may want to omit the shredded coconut as it tended to stop up the tip. I am just going to add a bit more extract next time I make them

When the cup cakes are cool, insert the tip of the bag and pull up as you squeeze the filling. Ice with milk chocolate icing and garnish with some shredded coconut and/or sliced almonds! YUuUUUuuUuUum! I got RAVE reviews!
